ANGELES CITY – iLEAD Institute for Learning, one of the most promising culinary schools in the area, held the 7 Plates Sisig Fiesta event last April 21st as part of their Golden Fork Food Fest.
Their students undergo a culminating activity to simulate actual industry events, thus the Golden Fork Food Fest. This is a series of 5 to 7 events organized by the students where they are given full control of the whole project and are responsible for coming up with original themes and ideas, plan the full course menu, determine the fee based on their computed costs, design and execute the theme chosen, assign responsibilities and work as a team. This is the module that all students look forward to with “apprehension” and enthusiasm because they invite “paying guests” and are evaluated based on the success of their event.
Traditionally, the Golden Fork Food Fest ends with the 7 Plates Lunch where a full 7 course meal is served.
Because Angeles City has claimed ‘sisig’ as ‘cultural heritage’, making the original pork sisig recipe as part of Kapampangan culinary history and a tourist attraction, the students of iLEAD’s Batch 34, in support of the Annual Sisig Fiesta 2017, decided on the theme 7 Plates SISIG Fiesta. The chosen theme for this Batch reinforces pride in our Kapampangan culinary heritage.
Here’s their 7 Plates Sisig Fiesta Menu:
Soup- Tidtad Baka
Appetizer: Fried Lagat Pusu Saging Roll
Salad: Ensaladang Sisig Matua
Main 1: Chicken Kelaguen Wrap
Main 2: Grilled Lagat Paro
Main 3: Classic Pork Sisig
Dessert: Mantecado Ice Cream w/ Kamias Jam
Quoting a graduate of iLEAD:
“iLEAD not only gave us our skills, but also instilled in us professionalism, integrity and love for our heritage. “Isa sa mga bagay na nagustuhan ko dito sa iLEAD ay ang pagsusulong nila na ituro at ipreserba ang kapampangan heritage, our own cuisine and the history behind it. Ako po ay purong kapampangan, at sabik ako sa kasaysayan ng aking sariling probinsya.”
“Dito nalaman ko na kahit saan ka man makarating ay kailangan mo’ng ipagmalaki ang iyong pinanggalingan para mag-stand out ka as an individual. Kaya sa t’wing may bago akong nakilala ay proud ‘kong sinasabi na kapampangan ako.” I firmly believe that one of the strongest points one can have is his love for his own heritage, and I am glad because I learned that here in iLEAD.” (Joseph S. Pelayo CC Batch 30)
